To find this plant that is nicknamed the black gold of Madagascar, you must first fly over the Indian Ocean, then cross the winding and steep roads of the red island. It is there, in the SAVA region, that this mythical orchid grows. And yes, vanilla is the fruit of an orchid, Vanilla Planifolia. It grows in the form of a vine that climbs in the shade of the trees!
Between September and December it offers a magical spectacle: the appearance of floral ramps bringing together 6 to 15 flowers, oscillating from yellow to pale green. The flowers are hermaphroditic, meaning that a single flower has both male and female reproductive organs, and are only fertile for a very short time…. This is where matchmakers come in! Using a wooden stick, these magicians with expert fingers will come and fertilize the flowers one by one by hand. Unique know-how.
9 months later, around July, the pods will be picked. They will then still be green, and devoid of any vanilla olfactory note. Many of them will have been tattooed by the producers to dissuade passers-by from stealing them... a natural QR code! It is a true work of art of which the Malagasy people have the secret to produce an exceptional quality of vanilla while respecting the women, men and the biodiversity of the territory.
Malagasy know-how
The vanilla is made according to traditional know-how, in 4 steps:
1.Scalding
The green pods are boiled for a few minutes and the vanillin, this natural molecule which gives vanilla this sensual scent, will develop.
2. Steaming
The still warm pods are wrapped in large burlap then left to darken in wooden boxes for 2/3 days. They will sweat and begin to release their aromas.
3. Drying
For more than a month the pods will be exposed to the sun for two to three hours a day, then stored in the shade. Handled by hand, turned, mixed, the pods will ripen and naturally turn black.
4. Refining
Once drier, they will be placed in wooden trunks in order to develop the secondary natural aromas. A true olfactory delight. It will take 6 kg of green pods to make just 1 kg of black pods!

The processing of vanilla is done according to traditional know-how. This ensures traceability and supports local communities. This solidarity purchasing initiative helps develop a sustainable vanilla supply chain. It respects natural ecosystems, while improving the living conditions of the inhabitants of Madagascar. It provides farmers with a stable income and allows them to benefit from training on responsible agricultural practices.
